Flat Peach and Almond Cake

Ingredients
- 100 g 00 flour
- 100 g almond flour
- 100 g sugar
- 100 g softened butter
- 2 eggs
- 1 packet baking powder
- 3 or 4 ripe flat peaches
- A pinch of salt
- Powdered sugar for dusting
Preparation
- Preheat the oven to 180 °C.
- In a bowl, combine the softened butter and sugar and work them together until you obtain a fluffy mixture.
- Add the eggs, one at a time, continuing to mix to incorporate them well.
- Fold in the sifted flour with the baking powder and the almond flour, mixing gently to avoid lumps and add a pinch of salt.
- Peel the flat peaches, remove the pit and slice them thinly.
- Pour the batter into a buttered and floured cake pan and arrange the peach slices on the surface of the cake, pressing them lightly into the batter.
- Bake for about 40 minutes or until a toothpick inserted in the center of the cake comes out clean.
- Let the cake cool in the pan before unmolding.
- Dust with powdered sugar before serving.
