Fluffy Pancakes
17/11/2023Fluffy pancakes, often also called “Fluffy Pancakes”, are a particularly airy and tall version of classic pancakes. Here’s how you can prepare them:
Ingredients
- 135 g 00 flour
- 30 g sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 130 ml milk
- 1 large egg
- 2 tablespoons melted butter
- Extra butter for cooking
Preparation
- In a large bowl, combine all the dry ingredients: flour, sugar, baking powder, baking soda, and salt.
- In another bowl, mix the egg with the milk and melted butter.
- Make a well in the center of the dry ingredients and pour in the liquid ingredients mix. Stir gently with a fork until the ingredients are just combined; remember it’s okay if there are still some lumps.
- Heat a non-stick pan over medium heat and add a bit of butter.
- Pour a portion of the batter into the heated pan to form your pancake. Cook until you see bubbles forming on the surface, then flip it and cook for another minute or until golden.
- Repeat with the rest of the batter, adding more butter to the pan if necessary.
- Serve the pancakes hot with maple syrup, fresh fruit, or your preferred topping.
Trivia
It is said that the addition of baking soda helps make the pancakes particularly fluffy and tall thanks to its reaction with the acidity present in the milk. The key to achieving fluffy pancakes is not to overmix the batter and to cook at a constant and not too high temperature.
