Fregola with Scampi and Shrimp

I can provide you with a recipe for fregola with scampi and shrimp, a delicious dish typical of Sardinian cuisine that we have revisited with a more general Italian touch.

Ingredients

  • 250 g fregola sarda
  • 200 g fresh scampi
  • 200 g fresh shrimp
  • 1 garlic clove
  • Extra-virgin olive oil
  • Chopped parsley
  • Salt and pepper to taste
  • 1/2 glass white wine
  • Fish stock as needed
  • Cherry tomatoes

Preparation

  1. Clean the scampi and shrimp by removing the shell and intestine, then set them aside.
  2. In a large pan, lightly sauté a garlic clove in extra-virgin olive oil.
  3. Add the scampi and shrimp and sear over high heat for a couple of minutes.
  4. Deglaze with white wine and let the alcohol evaporate.
  5. Add the halved cherry tomatoes and cook for a few minutes.
  6. Meanwhile, bring fish stock to a boil in a separate pot.
  7. Add the fregola to the pan with the scampi and shrimp, moisten with hot fish stock and cook according to the package instructions, adding more stock as needed to keep the mixture moist.
  8. At the end of cooking, adjust salt and pepper, sprinkle with chopped parsley and finish with a drizzle of extra-virgin olive oil.

Curiosities

Fregola is a type of pasta typical of Sardinia that comes in the form of small spheres, similar to couscous but larger in size. Its particular texture makes it perfect for absorbing the flavors of the broth and seasonings with which it is cooked, resulting in an excellent pairing with the delicate flavor of scampi and shrimp.
