Frico

Frico is a traditional dish of Friulian cuisine, rich and flavorful, which can be prepared in two main variants: soft, with potatoes and onions, or crispy, made only with cheese. Below I illustrate the recipe for soft frico.

Ingredients

  • 300 g aged Montasio cheese to grate
  • 300 g fresh Montasio cheese to cut into cubes
  • 600 g potatoes
  • 1 medium onion
  • Salt to taste
  • Pepper to taste
  • Extra virgin olive oil

Preparation

  1. Start by peeling the potatoes and cutting them into thin slices or small cubes. Cook them in a pan with a drizzle of oil and a pinch of salt, until they are golden and soft.

  2. Slice the onion and add it to the potatoes, sautéing everything until the onion becomes translucent.

  3. Add the fresh Montasio cheese cut into cubes and let it melt slightly with the rest of the ingredients.

  4. In another non-stick pan, evenly distribute the grated aged Montasio to form a compact base and cook over medium-low heat until a golden and crispy crust forms.

  5. Pour the mixture of potatoes, onion, and fresh cheese over the crispy cheese crust and let it cook together for a few more minutes.

  6. When the fresh Montasio has completely melted, check the browning of the bottom, then flip the frico using a plate to brown the other side as well.

  7. Once golden on both sides, the frico is ready to be served hot.

Trivia

Originally, frico was prepared by Friulian shepherds using leftover cheese and potatoes, energy-rich and easily available foods. Today it is a celebrated dish that can be found on restaurant menus in the region, as well as in homes for a rich and comforting meal.
