Fried Morbidoni with Jam

Fried jam Morbidoni are a type of fried sweets, indulgent and delicious, which when filled with jam become an irresistible pleasure. Here they are:

Ingredients

  • 500 g 00 flour
  • 25 g fresh brewer’s yeast
  • 100 g sugar
  • 1 pinch of salt
  • 2 eggs
  • 100 g softened butter
  • 200 ml lukewarm milk
  • Grated zest of 1 lemon
  • Jam of your choice for filling
  • Seed oil for frying
  • Powdered sugar for garnish

Preparation

  1. In a bowl, dissolve the brewer’s yeast in the lukewarm milk and add a tablespoon of sugar and two tablespoons of flour taken from the total. Mix well and let rest for about 15 minutes, until the initial dough doubles (this is called the starter).
  2. In a larger bowl, sift the remaining flour and form a well in the center. Add the sugar, eggs, softened butter cut into pieces, grated lemon zest, and the starter.
  3. Begin kneading from the liquids in the center and gradually incorporate the flour. Add a pinch of salt and work the dough until you obtain a smooth and elastic mass. If necessary, add a little more flour.
  4. Cover the dough with a clean cloth and let it rise in a warm, draft-free place for about 2 hours, or until doubled.
  5. Roll out the dough on a lightly floured surface to about 1 cm thickness and cut out disks using a glass or round cookie cutter.
  6. Place a teaspoon of jam in the center of each disk, then fold in half and seal the edges, forming half-moons.
  7. Let the filled morbidoni rest for another 30 minutes, covered with a cloth.
  8. Meanwhile, heat plenty of seed oil in a deep pan and, once it reaches the right temperature (about 170-180 °C), fry the morbidoni until evenly golden.
  9. Drain on paper towels and let them cool slightly before dusting with powdered sugar.

Curiosities

This recipe recalls the tradition of fried sweets typical of many Italian regions, especially during Carnival. The indulgent jam filling can be varied as desired with different flavors or replaced with pastry cream or chocolate. In many regional variants, lard is used instead of seed oil, giving a more authentic flavor and characteristic texture. Enjoy your meal!
