Giant American Pancakes
17/11/2023Giant American pancakes are an oversized version of traditional pancakes. Ideal for a family breakfast or brunch, these pancakes require a larger pan for cooking and a bit of attention to flip them without breaking. Here’s how to make them:
Ingredients
- 250 g flour
- 2 tablespoons sugar
- 1/2 teaspoon salt
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 2 large eggs
- 30 g melted and cooled butter, plus a little for greasing the pan
- 500 ml milk
- 1 teaspoon vanilla extract (optional)
Preparation
- In a large bowl, sift together the flour, sugar, salt, baking powder and baking soda.
- In another bowl, beat the eggs and then add the melted butter, milk and vanilla extract, mixing well until you have a smooth mixture.
- Pour the wet ingredients over the dry ingredients and stir with a whisk or wooden spoon until just combined. Do not overmix; a few lumps are fine.
- Heat a large skillet or griddle over medium heat and grease the surface with a little butter.
- Pour about 1/2 cup of pancake batter into the pan and cook until bubbles form on the surface and the edges look set, about 2-3 minutes.
- Carefully flip the pancake using a wide spatula and cook for another 1-2 minutes or until the pancake is golden and cooked through in the center.
- Remove the pancake from the pan and repeat with the remaining batter, adding more butter to the pan if necessary.
- Serve the pancakes hot with maple syrup, butter, fresh fruit or other toppings of your choice.
