Giant American Pancakes

Giant American pancakes are an oversized version of traditional pancakes. Ideal for a family breakfast or brunch, these pancakes require a larger pan for cooking and a bit of attention to flip them without breaking. Here’s how to make them:

Ingredients

  • 250 g flour
  • 2 tablespoons sugar
  • 1/2 teaspoon salt
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 2 large eggs
  • 30 g melted and cooled butter, plus a little for greasing the pan
  • 500 ml milk
  • 1 teaspoon vanilla extract (optional)

Preparation

  1. In a large bowl, sift together the flour, sugar, salt, baking powder and baking soda.
  2. In another bowl, beat the eggs and then add the melted butter, milk and vanilla extract, mixing well until you have a smooth mixture.
  3. Pour the wet ingredients over the dry ingredients and stir with a whisk or wooden spoon until just combined. Do not overmix; a few lumps are fine.
  4. Heat a large skillet or griddle over medium heat and grease the surface with a little butter.
  5. Pour about 1/2 cup of pancake batter into the pan and cook until bubbles form on the surface and the edges look set, about 2-3 minutes.
  6. Carefully flip the pancake using a wide spatula and cook for another 1-2 minutes or until the pancake is golden and cooked through in the center.
  7. Remove the pancake from the pan and repeat with the remaining batter, adding more butter to the pan if necessary.
  8. Serve the pancakes hot with maple syrup, butter, fresh fruit or other toppings of your choice.
