Glazed Strawberry Rolls

Glazed strawberry rolls are a delicious dessert to enjoy as a snack or at the end of a meal. They are a greedy and fruity variant of classic sweet rolls. Here is the recipe to prepare them:

Ingredients

  • For the roll dough:

    • 3 eggs
    • 100 g of sugar
    • 100 g of 00 flour
    • 1 teaspoon of baking powder
    • A pinch of salt
  • For the filling and glaze:

    • 200 g of fresh strawberries
    • 100 g of powdered sugar
    • 250 g of ricotta or mascarpone
    • 1 packet of vanillin
    • Lemon juice (to taste)

Preparation

  1. Start by beating the eggs with the sugar until you obtain a light and foamy mixture.
  2. Slowly add the sifted flour with the baking powder and salt, mixing gently so as not to deflate the mixture.
  3. Pour the batter into a rectangular pan lined with parchment paper and spread it evenly.
  4. Bake in a preheated oven at 180 °C for about 10-12 minutes. The batter should be golden and soft to the touch.
  5. Meanwhile, prepare a mixture of blended strawberries with powdered sugar and a few drops of lemon juice.
  6. Once the batter is cooked, turn it out onto a damp cloth and gently roll it out. Spread the strawberry and ricotta or mascarpone mixture over the entire surface.
  7. Carefully roll the dough onto itself, starting from the longer side, wrapping it in the cloth. Let it cool for about an hour.
  8. Prepare a glaze by blending some strawberries with powdered sugar and a few drops of lemon juice to obtain a homogeneous consistency that is not too liquid.
  9. Once the roll is cold, remove the cloth and cut the roll into slices about 2 cm thick. Arrange the rolls on a wire rack and pour the strawberry glaze over them.
  10. Let the glaze set before serving the rolls.

Fun Facts

The rolls are a very versatile preparation and can be made with numerous fillings and toppings. The strawberry variant is particularly suitable for spring and summer, when these fruits are at the peak of their seasonality. In addition, you could experiment by adding pieces of fresh strawberry inside the filling for an extra touch of texture and freshness.
