Gnocchetti with Gorgonzola and Walnuts

Ingredients

  • 400 g of Sardinian gnocchetti or other short pasta of your choice
  • 200 g of sweet or spicy gorgonzola, depending on taste
  • 100 ml of cooking cream
  • 50 g of shelled walnuts
  • Salt to taste
  • Black pepper to taste
  • (Optional) Fresh chopped parsley for garnish

Preparation

  1. Bring a pot of salted water to a boil and cook the gnocchetti according to the time indicated on the package. Once ready, drain them, reserving a little cooking water.
  2. Meanwhile, in a large skillet, melt the gorgonzola over low heat together with the cream to form a smooth sauce. If the sauce is too thick, add a little pasta cooking water to make it more fluid.
  3. Roughly chop the walnuts and add them to the gorgonzola sauce, stirring gently.
  4. Add the drained gnocchetti to the skillet with the gorgonzola and walnut sauce, and toss everything for a couple of minutes so the pasta absorbs the flavors well.
  5. Adjust salt and pepper to taste.
  6. If desired, sprinkle with fresh chopped parsley before serving.
