Gnocchetti with Prosciutto and Saffron

Ingredients
- 500 g gnocchetti (you can use potato gnocchi if you prefer)
- 200 g prosciutto cotto or crudo, depending on your preferences
- 1 sachet of saffron powder
- 1 small onion
- 200 ml cooking cream
- Extra virgin olive oil to taste
- Salt and pepper to taste
- grated Parmesan for serving
- Water for cooking the gnocchetti
Preparation
- Bring a pot of salted water to a boil for the gnocchetti.
- Meanwhile, cut the prosciutto into strips or cubes.
- Finely slice the onion and sauté it in a pan with a drizzle of extra virgin olive oil until it becomes translucent.
- Add the prosciutto to the pan with the onion and let it brown for a few minutes.
- Dissolve the sachet of saffron in a small amount of hot water and add it to the onion and prosciutto sauté.
- Pour the cooking cream into the pan, mix well and let it cook over low heat until you obtain a homogeneous sauce.
- Adjust salt and pepper to taste and continue cooking over low heat until the sauce has slightly thickened.
- Cook the gnocchetti in the boiling water. Drain them al dente and transfer them to the pan with the sauce.
- Mix the gnocchetti with the sauce, making sure to coat them completely.
- Serve the gnocchetti hot and sprinkle with grated Parmesan.
You can accompany this dish with a glass of white wine, such as a Chardonnay or a Trebbiano, which pairs well with the creaminess of the sauce and the savoriness of the prosciutto.
