Gnocchi with Zucchini and Saffron

Zucchini and saffron gnocchi are a delicious dish and quite simple to prepare. Here is the recipe.

Ingredients

  • 500 g potato gnocchi
  • 2 medium zucchini
  • 1 sachet of saffron powder
  • 1 clove of garlic
  • 200 ml cooking cream
  • grated Parmesan cheese to taste
  • Extra virgin olive oil
  • Salt and pepper to taste

Preparation

  1. Start by cleaning the zucchini and cutting them into slices or cubes, according to your preference.
  2. In a large pan, heat a drizzle of extra virgin olive oil and add the clove of garlic, letting it brown. Once browned, we can remove it if we want a less intense flavor.
  3. Add the zucchini to the pan and sauté over medium heat until they are lightly golden and soft. Season with salt and pepper to taste.
  4. Meanwhile, in a small saucepan, dissolve the sachet of saffron in a little hot water.
  5. Add the cooking cream to the zucchini and then incorporate the dissolved saffron. Mix well and let the sauce combine and thicken slightly.
  6. Cook the gnocchi in a pot with plenty of salted water following the instructions on the package. Drain them as soon as they rise to the surface, indicating they are ready.
  7. Transfer the gnocchi to the pan with the zucchini and saffron cream, and toss over high heat for a few minutes so they absorb the flavors well.
  8. Plate and sprinkle with grated Parmesan before serving.
