Golden Milk Gelato

Golden milk ice cream is a delicious fresh and sweet reinterpretation of traditional golden milk, an Indian-origin drink known for its anti-inflammatory and antioxidant properties thanks to turmeric, the main spice in this preparation.

Ingredients

  • 400 ml whole milk
  • 200 ml fresh cream
  • 100 g sugar
  • 2 tablespoons honey
  • 2 teaspoons turmeric powder
  • 1 teaspoon cinnamon powder
  • 1 piece of fresh grated ginger (about 1 cm)
  • A pinch of ground black pepper (to increase turmeric absorption)
  • 1 pinch of salt

Preparation

  1. In a medium saucepan, mix the milk with the sugar, honey, and the grated ginger piece. Bring the mixture almost to a boil over medium heat, making sure to stir to completely dissolve the sugar and honey.
  2. Reduce the heat and add the turmeric, cinnamon, black pepper, and salt. Let simmer for a couple of minutes, stirring occasionally.
  3. Turn off the heat and let infuse for about 30 minutes, then strain the milk to remove the ginger and any spice residues.
  4. Add the fresh cream to the spiced milk and mix well.
  5. Pour the mixture into an ice cream maker and follow the manufacturer’s instructions. If you don’t have an ice cream maker, put the mixture in a freezer-safe container and stir every 30-45 minutes to break up any ice crystals until the ice cream reaches the desired consistency.
  6. After the ice cream has frozen well, it is ready to be served. If you want a softer consistency, let the ice cream rest at room temperature for a few minutes before serving.

Golden milk ice cream is characterized by its unique flavor given by the combination of turmeric and spices. It is a real treat for the palate, perhaps to be accompanied with ginger cookies or an extra sprinkle of cinnamon on top.
