Gorgonzola Pasta

Ingredients
- Pasta (preferably penne or farfalle) - 320g
- Sweet Gorgonzola - 200g
- Cooking cream - 200ml
- Grated Parmesan - 50g
- Nutmeg - a pinch
- Black pepper - to taste
- Salt - to taste
- Butter - 30g (optional)
- Chopped walnuts - for garnish (optional)
Preparation
- Bring a large pot of salted water to a boil and cook the pasta according to the package instructions until al dente.
- While the pasta is cooking, take a pan and, if you decide to use it, melt the butter over medium heat.
- Add the Gorgonzola in pieces and melt it, stirring gently.
- Pour the cream into the pan and stir until you obtain a homogeneous mixture.
- Season with salt and add a pinch of nutmeg and black pepper to taste.
- Drain the pasta, reserving some cooking water, and add it to the pan with the Gorgonzola and cream.
- Mix well and add a bit of cooking water if necessary to make the sauce lighter.
- Serve immediately, sprinkling with grated Parmesan and, if desired, garnishing with chopped walnuts.
Trivia
Gorgonzola is an Italian cheese with Protected Designation of Origin (PDO), produced mainly in the regions of Lombardy and Piedmont. There are two main variants: Gorgonzola Dolce, which is softer and less pungent, and Gorgonzola Piccante, which is aged longer and has a stronger and more decisive flavor. For this recipe it is preferable to use Gorgonzola Dolce.
