Ingredients

  • 300 g of pasta (preferably tagliatelle or fettuccine)
  • 200 g of fresh spinach
  • 2 cloves of garlic
  • 2 tablespoons of extra virgin olive oil
  • Salt and pepper to taste

Preparation

  1. Start by washing the fresh spinach in running water to remove any soil residues. Drain well.
  2. In a large pan, heat the extra virgin olive oil over medium heat and add the peeled and crushed garlic cloves. Let it brown for a minute.
  3. Add the spinach to the pan and cook until wilted, stirring occasionally. Adjust with salt and pepper.
  4. Meanwhile, bring a pot of salted water to a boil and cook the pasta according to the times indicated on the package for al dente cooking.
  5. Drain the pasta and pour it into the pan with the spinach. Mix everything well to combine the ingredients.
  6. If desired, you can add grated parmesan to make the dish richer.

Serve the pasta hot, with an additional sprinkle of parmesan if desired.
