Ingredients
- 4 gurnard fillets
- 250 g cherry tomatoes
- 1 small white or red onion
- 2 garlic cloves
- 20 pitted black olives
- 2 tablespoons rinsed capers
- 1 handful fresh chopped parsley
- 100 ml dry white wine
- Salt and pepper to taste
- Extra virgin olive oil
Preparation
- Start by rinsing the gurnard fillets well under running water and patting them dry with paper towels. Season lightly with salt and pepper.
- In a large skillet, heat a drizzle of extra virgin olive oil and lightly brown the finely chopped onion together with the peeled garlic cloves left whole.
- Add the gurnard fillets and cook for about 2 minutes per side, then deglaze with the white wine and let the alcohol evaporate.
- Halve the cherry tomatoes and add them to the pan along with the black olives and capers.
- Adjust salt and pepper, lower the heat, and cook for another 10-15 minutes until the sauce has slightly thickened and the fish fillets are perfectly cooked.
- Just before turning off the heat, sprinkle with fresh chopped parsley to add freshness and aroma to the dish.
- Serve the gurnard hot, optionally accompanied by a light side such as grilled vegetables or a fresh salad.
