Hasselback Baked Potatoes

Ingredients

  • 4 large potatoes of equal size
  • 2 tablespoons of extra virgin olive oil
  • 2 garlic cloves
  • A few sprigs of fresh rosemary
  • Salt, to taste
  • Black pepper, to taste
  • Optionally, grated Parmesan or other herbs to taste

Preparation

  1. Prepare the oven: Preheat the oven to 220 °C.
  2. Clean the potatoes: Wash and dry the potatoes, then make thin slices along each potato, being careful not to cut all the way through, so they remain attached at the base.
  3. Season the potatoes: Mix in a bowl the extra virgin olive oil, chopped garlic, aromatic herbs (chopped rosemary), salt and freshly ground black pepper. Use a kitchen brush to spread this mix between the potato slices.
  4. Cooking: Place the potatoes on a baking tray lined with parchment paper and bake for about 60-70 minutes or until the outside is crispy and the inside is soft and fanned out.
  5. Serve: If you like, in the last few minutes of cooking, you can add grated Parmesan on top of the potatoes to create a golden and flavorful crust.

The technique of cutting the potatoes without separating them completely is called “fan-style” and allows the potatoes to cook more evenly, absorb the seasonings better, and become crispy on the outside while keeping the inside soft.
