Hazelnut Mousse
17/11/2023The hazelnut mousse is a creamy and delicious dessert that uses toasted hazelnuts for an intense and enveloping flavor. Here’s how to prepare it.
Ingredients
- 150 g of toasted hazelnuts
- 100 g of sugar
- 3 egg yolks
- 200 ml of whipping cream
- 50 g of butter
- 2 sheets of gelatin (or 4 g of powdered gelatin)
- 50 ml of milk
Preparation
- Start by toasting the hazelnuts in the oven or in a pan to enhance their flavor. Let them cool slightly and then chop them finely in a blender or with a food processor.
- Place the gelatin sheets in a bowl full of cold water to hydrate them for about 10 minutes (if using powdered gelatin, follow the instructions on the package for hydration).
- In a saucepan, dissolve the sugar with a little water and bring to a boil until you obtain a syrup. Let it cool slightly.
- In a small bowl, beat the egg yolks. Slowly add the sugar syrup to the egg yolks, continuing to beat until you obtain a light and foamy mixture.
- Dissolve the squeezed gelatin in the hot milk and incorporate it into the egg and sugar mixture.
- Add the chopped hazelnuts and melted butter and mix well until you obtain a homogeneous mixture.
- Whip the cream until foamy and gently incorporate it into the hazelnut mixture, being careful not to deflate it.
- Pour the mousse into cups or a single container and let it rest in the refrigerator for at least 4 hours before serving, so that it sets well.
