Hazelnut Muffins

Ingredients

  • 200 g of 00 flour
  • 100 g of finely chopped hazelnuts
  • 150 g of granulated sugar
  • 100 ml of milk
  • 80 ml of seed oil or melted butter
  • 2 large eggs
  • 1 sachet of baking powder
  • 1 pinch of salt
  • (Optional) a bit of vanilla extract to enrich the aroma

Preparation

  1. Preheat the oven to 180 °C and prepare a muffin tin by lining the cavities with paper liners.
  2. In a bowl, sift the flour with the baking powder and the pinch of salt.
  3. In another bowl, beat the eggs with the sugar until they become light and fluffy. This process promotes the softness of the muffins.
  4. Add the milk, the seed oil or melted butter (depending on preferences) and, if desired, a bit of vanilla extract for an extra touch of flavor. Mix everything well.
  5. Gradually incorporate the sifted flour mixture into the liquid mixture, stirring carefully to avoid the formation of lumps.
  6. Add the chopped hazelnuts to the batter and mix gently until a homogeneous mixture is obtained.
  7. Fill the paper liners up to three-quarters with the batter, to allow the muffins to rise during baking.
  8. Bake the muffins and cook for about 20-25 minutes or until a toothpick inserted in the center of a muffin comes out clean.
  9. Once cooked, remove the muffins from the oven and let them cool on a wire rack.
