- Add the egg yolk and mix until a homogeneous dough forms.
- Wrap the dough in plastic wrap and let it rest in the refrigerator for at least 30 minutes.
- Preheat the oven to 180 °C (160 °C if fan-assisted).
- Roll out the dough with a rolling pin on a lightly floured surface to about 5 mm thickness.
- Cut out the sablés using a cookie cutter or knife and place them on a baking tray lined with parchment paper.
- Bake the sablés for about 10-12 minutes or until lightly golden.
- Let the cookies cool completely on a wire rack.
For the chocolate coating:
- Chop the dark chocolate and melt it in a double boiler or microwave, adding a teaspoon of butter to give the coating shine.
