Homemade Gocciole
17/11/2023Gocciole are very popular chocolate chip cookies, perfect for breakfast or snack time. Here’s how to make them at home with an Italian twist.
Ingredients
- 250 grams of 00 flour
- 125 grams of brown sugar
- 125 grams of butter at room temperature
- 1 large egg
- 1 egg yolk
- 1/2 packet of baking powder
- 1 pinch of salt
- 1 teaspoon of vanilla extract (or vanillin)
- 150 grams of dark chocolate chips
Preparation
- Preheat the oven to 180 °C and prepare a baking sheet lined with parchment paper.
- In a bowl, cream the softened butter with the brown sugar until you get a creamy mixture.
- Add the whole egg and the yolk, then mix well.
- Incorporate the vanilla extract and mix again.
- In another bowl, sift the flour with the baking powder and salt.
- Add the dry ingredients to the butter and egg mixture, and work the dough until you get a homogeneous mixture.
- Add the chocolate chips to the dough and distribute them evenly.
- Using two spoons or your hands, form balls from the dough and place them on the prepared baking sheet, flattening them slightly; be careful to leave some space between each one because they will spread during baking.
- Bake for about 10-12 minutes or until the cookies are golden brown.
- Remove the cookies from the oven and let them cool on the baking sheet for a few minutes, then transfer them to a wire rack to cool completely.

Gocciole are a classic example of how a simple cookie can become famous thanks to its crunchy texture and generous chocolate chips. Adding high-quality dark chocolate will make a difference in the final result of the cookies.
