17/11/2023Here’s a simple and tasty recipe for making oven-baked red pizzettes at home:
Ingredients
- 500 g of 00 flour
- 250 ml of lukewarm water
- 7 g of active dry yeast (or 15 g of fresh yeast)
- 1 teaspoon of sugar
- 2 teaspoons of salt
- 2 tablespoons of extra virgin olive oil
- Tomato passata to taste
- Oregano to taste
- Mozzarella cut into cubes or grated cheese to taste
- Salt to taste
- Extra virgin olive oil to taste for seasoning
Preparation
- In a large bowl, dissolve the yeast and sugar in the lukewarm water and let it rest for about 5 minutes, until foam begins to form on the surface.
- In another bowl, mix the flour with the salt. Make a well in the center and pour in the activated yeast and extra virgin olive oil.
- Start mixing with a spoon first, then transfer the dough to a floured surface and knead it by hand until you get a smooth and elastic ball, for about 10 minutes.
- Place the dough in an oiled bowl, cover with a damp cloth or plastic wrap, and let it rise in a warm place until doubled in volume, which should take about 1-2 hours.
- Once the dough has risen, take it out and divide it into small balls of the desired size for the pizzettes.
- Roll out each ball on a floured surface to form disks about 0.5 cm thick.
- Arrange them on baking trays lined with parchment paper, leaving a little space between each one.
- Spread a tablespoon of tomato passata on each disk, leaving a free border all around.
- Season each pizzetta with a pinch of salt, oregano, and a drizzle of extra virgin olive oil.
- Distribute the mozzarella cubes or grated cheese over the tomato passata.
- Let the topped pizzettes rise for another 15-20 minutes while preheating the oven to 220 °C.
- Bake the pizzettes and cook for about 10-15 minutes or until golden and the cheese is fully melted.
- Remove the pizzettes from the oven and serve them hot.
