Hot Milk and Coffee Cake

Ingredients
- 3 eggs
- 250 g of sugar
- 1 packet of vanillin or one teaspoon of vanilla extract
- 250 g of 00 flour
- 250 ml of whole milk
- 100 g of butter
- 1 packet of baking powder
- 2 tablespoons of instant coffee or a cold espresso ristretto
- A pinch of salt
Preparation
- Preheat the oven to 180 °C and prepare a cake pan by buttering and flouring it or lining it with parchment paper.
- In a large bowl, beat the eggs with the sugar until you obtain a frothy and pale mixture. Add the vanillin or vanilla extract while continuing to beat.
- Dissolve the coffee in the hot milk. Meanwhile, melt the butter and let it cool slightly.
- Incorporate the sifted flour with the baking powder into the egg and sugar mixture, stirring gently to avoid lumps.
- Add the milk with coffee and melted butter a little at a time, continuing to mix until you obtain a homogeneous batter.
- Pour the batter into the prepared pan and bake for about 35-40 minutes or until a toothpick inserted in the center of the cake comes out clean.
- Let the hot milk and coffee cake cool before unmolding it and, if desired, dust it with powdered sugar before serving.
