Ice Cream-Filled Panettone

Here is a recipe for Ice Cream-Filled Panettone, a delight that combines two great classics of Italian cuisine: panettone and ice cream. Remember, this may not be a traditional recipe, but it will certainly be a delicious combination. If you don’t have a ready-made panettone, you can buy one of good quality or make one following a specific panettone recipe.

Ingredients

  • 1 panettone (about 1kg)
  • 1 liter of ice cream of your choice (vanilla, chocolate, stracciatella, etc.)
  • 100g candied fruit (optional)
  • 50g dark chocolate shavings (optional)
  • Orange liqueur or alchermes (optional for flavoring)

Preparation

  1. Cut the top off the panettone like a lid, about 3-4 cm from the edge.
  2. Gently hollow out the inside of the panettone, leaving a layer about 2 cm thick attached to the crust to create a “box” of panettone. Remove the large crumbs and save them for another use.
  3. Let the ice cream soften slightly until it becomes malleable.
  4. If desired, mix the softened ice cream with chopped candied fruit or chocolate shavings.
  5. Fill the hollow in the panettone with the ice cream, pressing lightly to fill all the spaces.
  6. Replace the panettone “lid” on top.
  7. Place the ice cream-filled panettone in the freezer for a few hours until the ice cream has hardened.
  8. Before serving, you can brush the top of the panettone with a little liqueur if desired.
  9. Slice the ice cream-filled panettone and serve.
