Invisible Apple Cake
17/11/2023The invisible apple cake is a delicious and surprising dessert due to the large quantity of apples in relation to the batter, which makes the apples almost “invisible”. Here is the recipe:
Ingredients
- 6 large apples (preferably of the tart variety)
- 2 eggs
- 100 g of sugar
- 70 g of melted butter
- 70 ml of milk
- 1 packet of vanillin or vanilla extract
- 100 g of flour
- 1 pinch of salt
- 1 packet of baking powder
- Powdered sugar for decoration (optional)
Preparation
- Preheat the oven to 180 °C.
- Peel the apples and slice them thinly with a mandoline or a very sharp knife. Set them aside.
- In a large bowl, beat the eggs with the sugar until you obtain a light and frothy mixture.
- Add the now lukewarm melted butter and the milk. Mix the ingredients well.
- Incorporate the flour, salt, and baking powder previously sifted, mixing gently so as not to deflate the mixture.
- Add the vanilla extract or vanillin and mix.
- Add the sliced apples to the batter and mix gently, making sure all the apple slices are coated with the batter.
- Pour the mixture into a pan lined with parchment paper or well buttered and floured.
- Bake in the oven for about 40-50 minutes or until the surface of the cake is golden and, inserting a toothpick in the center, it comes out clean.
- Let cool before unmolding the cake and dust it with powdered sugar before serving, if desired.

The “invisibility” of the apples is due to the fact that they are cut very thinly and blend perfectly with the batter, making the cake extremely moist and rich in fruit. This dessert is perfect for autumn or winter afternoons, perhaps accompanied by a cup of hot tea. It is also possible to add spices such as cinnamon or nutmeg to enrich the flavor.
