Jam Sbriciolata
17/11/2023The jam sbriciolata is a delicious variant of the classic crumble or pasticciotto. Its preparation is quite simple and the result is always appreciated for its external crunchiness and the sweetness of the jam filling. Here’s how to prepare it:
Ingredients
- 300 g of 00 flour
- 200 g of cold butter
- 100 g of sugar
- 1 egg + 1 egg yolk
- 1 pinch of salt
- 1 teaspoon of baking powder
- The grated zest of 1 lemon (optional)
- About 300 g of jam of your choice (apricot, strawberry, blueberries, etc.)
Preparation
- In a large bowl, mix the flour with the sugar, baking powder, salt and grated lemon zest to flavor.
- Add the cold butter cut into cubes and start working the dough with your fingertips to obtain a sandy mixture.
- Incorporate the egg and yolk and mix until they are completely absorbed, still obtaining a crumbly dough.
- Take a baking pan (usually a springform pan with a diameter of about 24 cm is used), line it with parchment paper and pour half of the crumbly dough, pressing it lightly with your hands to create an even layer.
- Spread the chosen jam on this first layer, leaving about half a centimeter from the edge to prevent it from leaking during baking.
- Cover the jam with the remaining crumbly dough, without pressing too much.
- Bake in a preheated oven at 180 °C for about 30-35 minutes or until the surface is golden and crunchy.
- Let the sbriciolata cool before removing it from the pan. Serve at room temperature, optionally with a dusting of powdered sugar.
You can play with the flavors, adding vanilla, cinnamon or other citrus zest to the dough, depending on the jam used and personal tastes.

The sbriciolata, as the name itself says, is characterized by its crumbly and “sbriciolosa” texture. Originally from Northern Italy, particularly Lombardy, the sbriciolata is often confused with the English crumble or the American apple pie, but it differs due to the presence of egg and yeast among the ingredients, which make it a variant closer to the world of cookies than to purely buttery baked goods like the crumble.
