Jam Swirl Cookies

Jam swirl cookies are a sweet temptation that combines the crumbly texture of the cookie with a spiral of delicious jam. Perfect for a sweet break or an energizing breakfast.

Ingredients

  • 150 g 00 flour
  • 100 g cold butter, cubed
  • 50 g powdered sugar
  • 1 egg yolk
  • Grated zest of 1 lemon
  • A pinch of salt
  • Fruit jam of your choice (about 150 g)

Preparation

  1. In a large bowl, sift the flour and powdered sugar. Add the cold butter in pieces and start working with your fingertips until you get a sandy mixture.
  2. Add the egg yolk, lemon zest and a pinch of salt, and quickly knead until you form a homogeneous shortcrust pastry ball. Wrap the dough in plastic wrap and let it rest in the refrigerator for at least 30 minutes.
  3. After the resting time, roll out the dough on a lightly floured surface to a thickness of about 3 mm.
  4. Spread a uniform layer of jam on the surface of the dough, leaving a slight free border on the sides.
  5. Gently roll the dough onto itself to create a log. If the roll is too soft, you can wrap it in plastic wrap and let it harden a bit in the fridge.
  6. Preheat the oven to 180 °C.
  7. With a sharp knife, cut the roll into slices about 1 cm thick. As you cut them, transfer the cookies to a baking tray lined with parchment paper.
  8. Bake the cookies for about 10-15 minutes or until golden.
  9. Remove from the oven and let the swirl cookies cool completely before serving.

Fun Fact

Jam swirl cookies have a curious history; they are thought to derive from the desire to create a cookie with lots of jam without it leaking during baking, hence the idea of rolling it inside the shortcrust pastry.

Advice: For an all-Italian variant, you can use a hazelnut or pistachio cream as filling, or perhaps add some cocoa to the shortcrust pastry for a more contrasting effect. Have fun in the kitchen and enjoy your meal!
