Lemon Chicken Strips

Ingredients
- 400 g chicken breast
- Flour, as needed to coat the chicken
- The juice of 1 lemon
- The grated zest of 1 lemon
- 1 garlic clove
- 1 sprig of fresh rosemary
- Salt and pepper to taste
- Extra virgin olive oil
- 100 ml chicken or vegetable broth
- Fresh chopped parsley, for garnish
Preparation
- Cut the chicken breast into strips, that is, thin and elongated pieces.
- Lightly coat the chicken strips with flour.
- In a large skillet, heat a drizzle of extra virgin olive oil with the garlic clove and the rosemary sprig. Once the garlic turns golden, remove it along with the rosemary.
- Add the floured chicken strips to the pan and brown them over medium-high heat until they are well cooked and crispy on the outside.
- Deglaze with the lemon juice, grate some lemon zest over the meat (be careful not to overdo it to avoid making the dish too bitter).
- Add the chicken broth, lower the heat and let it cook for a few minutes so that the chicken absorbs the flavors and the sauce reduces slightly.
- Adjust salt and pepper to your taste.
- Serve the lemon chicken strips sprinkled with fresh chopped parsley.
