Lemon Cod Fillets

Ingredients

  • 4 cod fillets (150-200 g each)
  • Salt and pepper to taste
  • Flour as needed for dusting
  • 2 lemons (juice and grated zest)
  • Fresh chopped parsley
  • 2 garlic cloves
  • Extra virgin olive oil
  • 1 glass of white wine

Preparation

  1. Pat the cod fillets dry with paper towels and season with salt and pepper.

  2. Lightly coat the fish in flour, shaking off the excess.

  3. Heat a drizzle of oil in a non-stick pan and sauté the garlic until golden, then remove it.

  4. Place the cod fillets in the pan and brown on both sides.

  5. Deglaze with white wine and let the alcohol evaporate.

  6. Lower the heat, cover the pan, and cook for a few minutes.

  7. Squeeze the lemon juice into the pan, adding the grated zest as well.

  8. Cook for another 5-10 minutes depending on the thickness of the fillets, until the fish is cooked but still moist.

  9. At the end of cooking, sprinkle with fresh chopped parsley.
