Lemon Cookies
17/11/2023Here is a recipe for delicious lemon cookies with an Italian touch.
Ingredients
- 220g of 00 flour
- 120g granulated sugar
- 100g butter at room temperature
- 1 large egg
- The grated zest of 1 untreated lemon
- 1 tablespoon fresh lemon juice
- 1/2 teaspoon baking powder
- A pinch of salt
- Powdered sugar for decorating
Preparation
- In a bowl, mix the flour, baking powder, and salt. Set them aside.
- In another larger bowl, cream the butter with the granulated sugar until you obtain a light and fluffy cream.
- Add the egg, grated zest, and lemon juice to the butter and sugar cream, mixing well until the ingredients are combined.
- Gradually incorporate the flour mixture, continuing to mix until a homogeneous dough forms.
- Take small portions of dough and form balls about 2 cm in diameter, then flatten them slightly to give the cookies the desired shape.
- Arrange the cookies on a baking sheet lined with parchment paper, keeping about 5 cm distance between each other.
- Bake in a preheated oven at 180 °C for 10-12 minutes or until the edges of the cookies start to turn slightly golden.
- Remove the cookies from the oven and let them cool for a few minutes on the baking sheet before transferring them to a wire rack to complete cooling.
- Once cooled, dust the cookies with powdered sugar to taste.
