Lemon Salmon

Lemon salmon is a simple and tasty preparation that enhances the flavor of the fish with the freshness of citrus fruits. Here is the recipe for a deliciously fragrant dish.

Ingredients

  • 4 salmon fillets (about 200 g each)
  • 2 untreated lemons
  • 2 tablespoons of extra virgin olive oil
  • Salt and pepper to taste
  • 1 sprig of fresh thyme (or 1 teaspoon of dried thyme)
  • 2 garlic cloves
  • Fresh chopped parsley, for garnish

Preparation

  1. Preheat the oven to 200 °C (180 °C if fan-assisted).
  2. Wash the lemons and slice them into thin rounds.
  3. Take a baking tray or an oven-safe dish and line it with parchment paper.
  4. Arrange half of the lemon slices on the parchment paper, creating a “base” for the salmon fillets.
  5. Season the salmon fillets with salt, pepper, and a drizzle of extra virgin olive oil. If possible, squeeze some fresh lemon juice over the fish to enhance its flavor.
  6. Place the salmon fillets on the lemon base in the baking tray, then cover them with the remaining lemon slices.
  7. Add the crushed garlic cloves (you can leave them in their skins) and the fresh thyme on and around the salmon.
  8. Bake the salmon for about 12-15 minutes, or until the fish reaches the desired doneness.
  9. Once ready, remove from the oven and sprinkle with fresh chopped parsley before serving.
