17/11/2023Lemon salmon is a simple and tasty preparation that enhances the flavor of the fish with the freshness of citrus fruits. Here is the recipe for a deliciously fragrant dish.
Ingredients
- 4 salmon fillets (about 200 g each)
- 2 untreated lemons
- 2 tablespoons of extra virgin olive oil
- Salt and pepper to taste
- 1 sprig of fresh thyme (or 1 teaspoon of dried thyme)
- 2 garlic cloves
- Fresh chopped parsley, for garnish
Preparation
- Preheat the oven to 200 °C (180 °C if fan-assisted).
- Wash the lemons and slice them into thin rounds.
- Take a baking tray or an oven-safe dish and line it with parchment paper.
- Arrange half of the lemon slices on the parchment paper, creating a “base” for the salmon fillets.
- Season the salmon fillets with salt, pepper, and a drizzle of extra virgin olive oil. If possible, squeeze some fresh lemon juice over the fish to enhance its flavor.
- Place the salmon fillets on the lemon base in the baking tray, then cover them with the remaining lemon slices.
- Add the crushed garlic cloves (you can leave them in their skins) and the fresh thyme on and around the salmon.
- Bake the salmon for about 12-15 minutes, or until the fish reaches the desired doneness.
- Once ready, remove from the oven and sprinkle with fresh chopped parsley before serving.
Trivia
Salmon is a fish rich in omega-3, essential fatty acids for our health, particularly for heart health. Paired with citrus fruits, it not only gains flavor but fits into a balanced and nutrient-rich diet.
Remember that you can always add a touch of Italian flair to the dish with a drizzle of high-quality extra virgin olive oil and fresh chopped parsley at the time of serving, for a more pronounced aromatic effect.
