Lemon Truffles

Ingredients
- 200 g of dry biscuits (such as Digestive or Oro Saiwa)
- 100 g of powdered sugar
- 100 g of soft butter
- Grated zest of 1 organic lemon
- Juice of 1 lemon
- Grated coconut or other for coating (powdered sugar, grated white chocolate, etc.)
Preparation
- Start by finely chopping the dry biscuits using a mixer until you obtain a fine powder.
- In a bowl, combine the soft butter with the powdered sugar and work the two ingredients until you obtain a homogeneous cream.
- Add the grated lemon zest and the juice, making sure to strain it to prevent the seeds from passing through. Mix all the ingredients well until they are well combined.
- Incorporate the chopped biscuits into the butter and lemon cream and mix until you obtain a homogeneous mixture.
- Place the mixture in the fridge for about 30 minutes, so that it hardens slightly and is easier to work with.
- After the mixture has cooled, take small portions of the dough and form balls with your hands.
- Roll each truffle in the grated coconut or chosen coating until completely covered.
- Arrange the truffles on a tray and place them in the refrigerator for at least an hour before serving.
