Preparation

  1. In a pan, sauté the onion, garlic, carrot, and celery in a little extra virgin olive oil until soft.

  2. Meanwhile, in a large bowl, lightly mash the lentils with a fork, still leaving some whole pieces to add texture.

  3. Add the sautéed vegetables to the lentils, along with the tomato paste, oregano, thyme, salt, and pepper.

  4. If you decide to use the egg, beat it and add it to the mixture to help bind all the ingredients.

  5. Gradually add the breadcrumbs until you achieve a consistency that allows you to form the burgers without them falling apart.

  6. Form burgers with the mixture and let them rest in the refrigerator for about 30 minutes; this step helps the burgers maintain their shape during cooking.

  7. Cook the burgers in a pan lightly greased with olive oil on both sides until golden brown.

  8. Serve them in a bun with your favorite sauces and sides.
