Ingredients
- 320 g di linguine
- 200 g of already cleaned shrimp
- 2 medium zucchini
- 1 sachet of saffron powder
- 1 clove of garlic
- Extra virgin olive oil
- Salt and pepper to taste
- Chopped parsley (optional)
Preparation
- Start by bringing a pot of salted water to a boil for the linguine. While the water comes to a boil, you can proceed with preparing the sauce.
- Wash the zucchini and cut them into rounds or, if you prefer, into julienne strips (thin slices).
- In a large skillet, heat a drizzle of extra virgin olive oil with a whole clove of garlic. When the garlic turns golden, remove it and add the zucchini to sauté over medium-high heat.
- While the zucchini are browning, cook the linguine in the boiling water following the times indicated on the package for al dente cooking.
- Meanwhile, add the shrimp to the zucchini and let them cook for a few minutes, until they turn pink.
- Dissolve the sachet of saffron in a small amount of hot water and pour it into the skillet with the zucchini and shrimp, stirring well. Adjust salt and pepper to your taste.
- Drain the linguine al dente and transfer them to the skillet with the sauce. Toss everything for a few minutes so the flavors blend well.
- If desired, sprinkle with chopped parsley before serving to add a touch of color and freshness.
