Ingredients

  • 320 g di linguine
  • 200 g of already cleaned shrimp
  • 2 medium zucchini
  • 1 sachet of saffron powder
  • 1 clove of garlic
  • Extra virgin olive oil
  • Salt and pepper to taste
  • Chopped parsley (optional)

Preparation

  1. Start by bringing a pot of salted water to a boil for the linguine. While the water comes to a boil, you can proceed with preparing the sauce.
  2. Wash the zucchini and cut them into rounds or, if you prefer, into julienne strips (thin slices).
  3. In a large skillet, heat a drizzle of extra virgin olive oil with a whole clove of garlic. When the garlic turns golden, remove it and add the zucchini to sauté over medium-high heat.
  4. While the zucchini are browning, cook the linguine in the boiling water following the times indicated on the package for al dente cooking.
  5. Meanwhile, add the shrimp to the zucchini and let them cook for a few minutes, until they turn pink.
  6. Dissolve the sachet of saffron in a small amount of hot water and pour it into the skillet with the zucchini and shrimp, stirring well. Adjust salt and pepper to your taste.
