17/11/2023Linguine with swordfish and lemon is a tasty dish that blends Mediterranean flavors, ideal for a summer dinner or when you want to feel close to the sea. Here is the recipe.
Ingredients
- 320 g linguine
- 200 g swordfish cut into cubes
- The juice of 1 lemon
- The grated zest of 1 organic lemon
- 2 tablespoons extra virgin olive oil
- 1 clove of garlic
- Fresh chopped parsley (to taste)
- Salt and pepper to taste
- Some salt-cured capers (rinsed and chopped, optional)
- Taggiasca olives or other sweet variety, pitted and chopped (optional)
Preparation
-
Place a pot with plenty of salted water on the heat for the linguine. When the water boils, cook the pasta al dente following the times indicated on the package.
-
While the pasta cooks, heat the extra virgin olive oil in a large skillet and add the garlic clove, letting it lightly brown.
-
Add the swordfish cubes to the skillet and cook over medium heat for a few minutes until golden on all sides. Be careful not to overcook the fish to avoid dryness.
-
Remove the garlic clove and add the lemon juice and zest. If desired, add the capers and olives. Season with salt and pepper.
-
Once the pasta is al dente, drain it and transfer to the skillet with the swordfish sauce. Mix well and let it absorb flavors for one minute.
-
Off the heat, sprinkle the linguine with swordfish and lemon with fresh chopped parsley to add a touch of color and flavor.
Fun Facts
Swordfish is a characteristic fish of the Mediterranean seas and lends itself very well to simple yet flavorful dishes like this one. Its delicate taste pairs perfectly with the fragrance of lemon and parsley, creating a balanced and refreshing dish.
For an even more Italian touch, serve this dish with a glass of fresh white wine, perhaps a Vermentino or a Grillo, whose acidity will perfectly balance the richness of the swordfish.
