Ingredients
- 320 g linguine
- 200 g tuna in oil (preferably of good quality)
- 250 g cherry tomatoes
- 2 cloves of garlic
- Fresh parsley to taste
- Chili pepper (optional)
- Extra virgin olive oil to taste
- Salt to taste
Preparation
- Start by bringing a large pot of salted water to a boil to cook the pasta.
- Meanwhile, wash and cut the cherry tomatoes in half or quarters, depending on your preference.
- In a large skillet, heat a drizzle of extra virgin olive oil and sauté the whole garlic cloves until golden, then remove them. If you like chili, you can add it at this stage.
- Add the cherry tomatoes to the pan and cook for a few minutes until they start to soften.
- Drain the tuna and roughly break it up, then add it to the pan with the tomatoes. Let it flavor for a few minutes, then turn off the heat.
- When the water boils, cook the linguine according to the cooking times indicated on the package to keep them al dente.
- Drain the pasta, reserving some cooking water, and transfer it to the pan with the tuna and tomato sauce.
- Turn the heat back on and toss the linguine with the sauce, adding a bit of cooking water to bind and emulsify everything.
- Turn off the heat, sprinkle the dish with chopped fresh parsley and a drizzle of raw olive oil.
The dish is ready to be served! You can accompany this delicious first course with a glass of fresh white wine, such as a Vermentino or a Fiano to enhance its flavors.
