Ingredients

  • 320 g linguine
  • 200 g tuna in oil (preferably of good quality)
  • 250 g cherry tomatoes
  • 2 cloves of garlic
  • Fresh parsley to taste
  • Chili pepper (optional)
  • Extra virgin olive oil to taste
  • Salt to taste

Preparation

  1. Start by bringing a large pot of salted water to a boil to cook the pasta.
  2. Meanwhile, wash and cut the cherry tomatoes in half or quarters, depending on your preference.
  3. In a large skillet, heat a drizzle of extra virgin olive oil and sauté the whole garlic cloves until golden, then remove them. If you like chili, you can add it at this stage.
  4. Add the cherry tomatoes to the pan and cook for a few minutes until they start to soften.
  5. Drain the tuna and roughly break it up, then add it to the pan with the tomatoes. Let it flavor for a few minutes, then turn off the heat.
  6. When the water boils, cook the linguine according to the cooking times indicated on the package to keep them al dente.
  7. Drain the pasta, reserving some cooking water, and transfer it to the pan with the tuna and tomato sauce.
  8. Turn the heat back on and toss the linguine with the sauce, adding a bit of cooking water to bind and emulsify everything.
  9. Turn off the heat, sprinkle the dish with chopped fresh parsley and a drizzle of raw olive oil.

The dish is ready to be served! You can accompany this delicious first course with a glass of fresh white wine, such as a Vermentino or a Fiano to enhance its flavors.
