Ingredients

  • 500 g ricotta
  • 4 eggs

Preparation

  1. Start by separating the egg yolks from the whites.
  2. In a bowl, beat the yolks with the sugar until you get a light and foamy mixture.
  3. Add the ricotta to the yolk and sugar mixture and mix gently.
  4. Incorporate the vanilla or vanilla seeds and the lemon zest.
  5. Sift the flour with the baking powder and add it to the mixture, stirring carefully to avoid lumps.
  6. In another bowl, beat the egg whites with a pinch of salt until stiff peaks form.
  7. Fold the beaten egg whites into the ricotta mixture, mixing from bottom to top to avoid deflating the mixture.
  8. Pour the batter into a buttered and floured pan or lined with parchment paper.
  9. Bake in a preheated oven at 180 °C for about 40 minutes, or until the cake is golden and firm to the touch.
  10. Let the cake cool in the pan, then unmold it onto a serving plate.
  11. Dust with powdered sugar before serving.
