Matcha Tea Plumcake

Ingredients
- 200 g of 00 flour
- 150 g of granulated sugar
- 100 g of softened butter
- 3 eggs
- 120 ml of milk
- 1 packet of baking powder
- 2 tablespoons of matcha tea powder
- 1 pinch of salt
Preparation
- Preheat the oven to 170 °C and butter or line a plumcake pan with parchment paper.
- In a bowl, sift the flour with the baking powder and matcha tea powder.
- In another bowl, cream the softened butter with the sugar using an electric whisk until you obtain a light and fluffy mixture.
- Add the eggs, one at a time, continuing to beat after each addition.
- Gradually incorporate the flour and matcha mixture into the egg mixture, alternating with the milk. Add a pinch of salt.
- Mix until you have a smooth and homogeneous batter, but without overworking it.
- Pour the batter into the prepared pan and level the surface with a spatula.
- Bake for about 40-45 minutes or until a toothpick inserted into the center of the plumcake comes out clean.
- Let the plumcake cool in the pan for about 10 minutes, then turn it out onto a wire rack to finish cooling.
