Meat Rolls with Mortadella and Cheese

Ingredients

  • 8 thin slices of beef or pork (such as veal round, rump or pork loin)
  • 8 slices of mortadella
  • 150 g soft cheese (for example mild provolone or scamorza)
  • Flour, as needed
  • Extra virgin olive oil
  • Salt and pepper, as needed
  • Dry white wine, 100 ml
  • Meat or vegetable broth, as needed
  • Kitchen twine or toothpicks

Preparation

  1. Lightly flatten the meat slices with a meat mallet to make them more tender and uniform.
  2. Place a slice of mortadella and some cheese cut into strips or cubes on each slice.
  3. Roll the slices onto themselves to form rolls and secure them with kitchen twine or toothpicks so they keep their shape during cooking.
  4. Dredge the rolls in flour to coat them lightly.
  5. In a wide pan, heat a drizzle of olive oil and add the rolls.
  6. Brown the rolls on all sides until they take on color.
  7. Deglaze with the white wine and let the alcohol evaporate.
  8. Lower the heat, add a little broth, season with salt and pepper, and cook covered for about 20 minutes, adding broth if necessary.
  9. Once cooked and tender, remove the rolls from the pan and keep them warm.
  10. In the remaining cooking juices, you can make a sauce by reducing the liquid or adding a little flour to thicken it.

Serve the rolls hot, accompanied by their sauce and, if desired, a side of vegetables or mashed potatoes.
