Meatloaf in a Loaf Pan

The meatloaf in a loaf pan is a variant of the classic meatloaf, cooked inside a loaf pan, which allows for an orderly shape and even cooking. Here is the recipe to prepare a delicious meatloaf in a loaf pan.

Ingredients

  • 800 g ground meat (a mix of beef and pork is ideal)
  • 2 whole eggs
  • 80 g stale bread
  • 120 ml milk
  • 50 g grated Parmesan
  • 1 garlic clove
  • Parsley to taste
  • Salt and pepper to taste
  • Breadcrumbs to taste
  • 1 carrot
  • 2 celery stalks
  • 1 onion
  • Extra virgin olive oil
  • 400 ml tomato passata

Preparation

  1. Start by soaking the stale bread in the milk until it becomes soft.
  2. In a large bowl, combine the ground meat, eggs, grated Parmesan, squeezed bread, chopped parsley, one crushed garlic clove, salt and pepper. Mix all the ingredients well until you have a homogeneous mixture.
  3. Grease a loaf pan with extra virgin olive oil and sprinkle with breadcrumbs.
  4. Transfer the meat mixture into the pan, pressing well to make it adhere and create an even surface.
  5. Meanwhile, prepare the soffritto by finely chopping the carrot, celery and onion and sautéing them in a pan with a drizzle of oil until they become soft and lightly golden.
  6. Add the tomato passata to the soffritto, season with salt and cook for about 15-20 minutes to obtain a sauce.
  7. Cover the meatloaf with half of the prepared sauce and bake in a preheated oven at 180 °C for about 1 hour and 15 minutes. Halfway through cooking, uncover the meatloaf and let it brown on the surface.
  8. Remove the meatloaf from the oven and let it rest for a few minutes before unmolding.

Serve the meatloaf in a loaf pan sliced and accompanied by the remaining sauce.
