Meatloaf with Frittata

Ingredients

  • 500g ground meat (beef or a mix of beef and pork)
  • 2 eggs (for the mixture)
  • 100g grated Parmesan cheese

  • 4-5 eggs (for the frittata)

Preparation

  1. Start by preparing the frittata. In a bowl, beat the 4-5 eggs, add salt and pepper and any additional ingredients you prefer. Heat a drizzle of oil in a pan and cook the frittata, browning it on both sides. Once ready, set it aside.
  2. In a large bowl, place the ground meat, add the two eggs, grated Parmesan cheese, salt, pepper, garlic powder, and chopped parsley if desired. Mix well until you obtain a homogeneous mixture.
  3. If the mixture is too soft, add breadcrumbs until you reach the right consistency.
  4. Spread the meat mixture on a work surface or on a sheet of parchment paper, shaping it into a rectangle about 1-2 cm thick.
  5. Place the cold frittata in the center of the meat rectangle, then roll the meat around the frittata, making sure to seal the sides well to prevent the filling from leaking during cooking.
  6. Seal the meatloaf well and transfer it to a lightly greased baking dish. If desired, you can cover the meatloaf with slices of pancetta or prosciutto to add flavor and keep the meat moist.
  7. Bake in a preheated oven at 180 °C for about 45-60 minutes, depending on the size of the meatloaf.
  8. Once cooked, let the meatloaf rest for a few minutes before slicing.
