Mediterranean Pan Chicken

Mediterranean chicken is a dish rich in flavors typical of Mediterranean cuisine, with the addition of ingredients like olives, tomatoes and aromatic herbs that create a perfect combination. Here’s how to prepare it:

Ingredients

  • 4 chicken thighs (or breasts, if you prefer)
  • 2 tablespoons extra virgin olive oil
  • 1 garlic clove
  • 1 sprig fresh rosemary
  • 1 sprig fresh thyme
  • 150 g cherry tomatoes
  • 100 g pitted black olives
  • Salt and pepper to taste
  • Juice of half a lemon
  • 100 ml white wine
  • A pinch of dried oregano

Preparation

  1. Start by washing and thoroughly drying the chicken thighs. Season with salt and pepper to taste.
  2. In a large skillet, heat the extra virgin olive oil and add the crushed garlic and aromatic herbs (rosemary and thyme). Let them infuse for a couple of minutes.
  3. Place the chicken thighs in the skillet and brown them well on all sides until golden. This step is important to seal in the juices.
  4. Once the chicken has colored, deglaze with the white wine and let the alcohol evaporate over high heat for a couple of minutes.
  5. Add the halved cherry tomatoes and black olives, then the lemon juice, oregano and adjust salt and pepper if necessary.
  6. Lower the heat, cover the skillet with a lid and cook for about 20-30 minutes, or until the chicken is fully cooked and the sauce has slightly reduced.
  7. Occasionally turn the chicken thighs to ensure even flavoring.

Once cooked, transfer the chicken to a serving plate and drizzle with the cooking sauce. It can be served hot or at room temperature, perfect with a side of grilled vegetables or a fresh salad.
