Mediterranean Pan Chicken
17/11/2023Mediterranean chicken is a dish rich in flavors typical of Mediterranean cuisine, with the addition of ingredients like olives, tomatoes and aromatic herbs that create a perfect combination. Here’s how to prepare it:
Ingredients
- 4 chicken thighs (or breasts, if you prefer)
- 2 tablespoons extra virgin olive oil
- 1 garlic clove
- 1 sprig fresh rosemary
- 1 sprig fresh thyme
- 150 g cherry tomatoes
- 100 g pitted black olives
- Salt and pepper to taste
- Juice of half a lemon
- 100 ml white wine
- A pinch of dried oregano
Preparation
- Start by washing and thoroughly drying the chicken thighs. Season with salt and pepper to taste.
- In a large skillet, heat the extra virgin olive oil and add the crushed garlic and aromatic herbs (rosemary and thyme). Let them infuse for a couple of minutes.
- Place the chicken thighs in the skillet and brown them well on all sides until golden. This step is important to seal in the juices.
- Once the chicken has colored, deglaze with the white wine and let the alcohol evaporate over high heat for a couple of minutes.
- Add the halved cherry tomatoes and black olives, then the lemon juice, oregano and adjust salt and pepper if necessary.
- Lower the heat, cover the skillet with a lid and cook for about 20-30 minutes, or until the chicken is fully cooked and the sauce has slightly reduced.
- Occasionally turn the chicken thighs to ensure even flavoring.
Once cooked, transfer the chicken to a serving plate and drizzle with the cooking sauce. It can be served hot or at room temperature, perfect with a side of grilled vegetables or a fresh salad.
