Mini Chicken Breast Flans

Ingredients
- 300 g of chicken breast
- 2 eggs
- 100 ml of cooking cream
- 30 g of grated parmesan
- Salt and pepper to taste
- Butter and breadcrumbs for the molds
- A pinch of nutmeg (optional)
Preparation:
- Preheat the oven to 180 °C.
- Finely chop the chicken breast with a knife or using a food processor.
- In a bowl, beat the eggs with a pinch of salt and pepper.
- Add the chopped chicken, cooking cream, grated parmesan to the egg mixture, and, if you like, a pinch of nutmeg.
- Butter and sprinkle with breadcrumbs some flan or muffin molds. This will help to unmold them more easily after cooking.
- Fill the molds with the mixture and level it with the back of a spoon.
- Arrange the molds in a baking pan and pour hot water inside up to half the height of the molds, thus preparing a bain-marie cooking.
- Bake for about 20-25 minutes or until the flans are golden and well cooked in the center.
- Remove from the oven and let cool slightly for a few minutes before gently unmolding them with the help of a spatula or a knife.
