Mixed Berry and Ricotta Crumble
17/11/2023The mixed berry and ricotta crumble is a delicious dessert that combines the crunch of a crumble with the sweetness of ricotta and the freshness of mixed berries. Here is the recipe:
Ingredients
For the base and topping:
- 300 gr of 00 flour
- 200 gr of cold butter, cubed
- 100 gr of sugar
- 1 egg
- 1 pinch of salt
- 1/2 sachet of baking powder
- Grated zest of 1 lemon (optional)
For the filling:
- 250 gr of ricotta
- 70 gr of sugar
- Mixed berries to taste (raspberries, blueberries, redcurrants, wild strawberries)
- 1 sachet of vanillin or the seeds of 1 vanilla pod
- Powdered sugar for decoration (optional)
Preparation

Start by preparing the base and crumble topping: in a bowl, mix the flour with the cold cubed butter until you get a crumbly mixture. Add the sugar, egg, salt, baking powder and grated lemon zest and quickly work everything together until you have large crumbs. Place in the fridge while you prepare the filling.

For the filling, mix the ricotta with the sugar and vanillin (or vanilla seeds) until you obtain a smooth cream.

Spread half of the crumble dough on a baking tray lined with parchment paper, creating a compact layer.

Spread the ricotta cream on top, followed by the washed and dried mixed berries.

With your hands, crumble the remaining dough to create a sort of crumble and distribute it evenly over the mixed berries.

Bake in a preheated oven at 180 °C for about 30-40 minutes, or until the surface is golden.

Let the crumble cool before serving. If desired, dust with powdered sugar before serving.
Trivia
The sbriciolata is a cake of Italian origin, very similar to the English crumble, but it differs in the use of baking powder in the dough, which makes it slightly taller and softer. You can customize the crumble by replacing the mixed berries with other types of fruit or even chocolate chips for an even more indulgent version.
