Mixed Fried Vegetables and Cheeses
17/11/2023The mixed fried vegetables and cheeses is a flavorful dish that combines the crispiness of fried vegetables with the creaminess of melted cheese. Here’s how to prepare this delicious dish:
Ingredients
- Assortment of fresh vegetables (for example, zucchini, eggplant, bell peppers, artichokes) cut into sticks or slices
- Soft or semi-soft cheeses that are suitable for frying (such as mozzarella, scamorza, brie or camembert) cut into pieces or slices
- Flour as needed (preferably type 00)
- 2-3 beaten eggs
- Breadcrumbs as needed
- Salt and pepper to taste
- Oil for frying (seed oil or extra virgin olive oil, depending on taste)
Preparation
- Start by preparing the vegetables and cheeses: wash them and cut them as indicated in the ingredients.
- Heat plenty of oil in a pan or in a fryer.
- Prepare three containers: one with the flour, one with the beaten eggs seasoned with salt and pepper, and one with the breadcrumbs.
- Lightly flour the vegetables and cheeses, dip them in the egg and then in the breadcrumbs.
- Fry the breaded vegetables and cheeses in hot oil (180 °C) until golden and crispy. You can fry a few pieces at a time to avoid lowering the oil temperature too much.
- As they are ready, transfer them to paper towels to remove excess oil.
- Arrange the mixed fry on a serving plate, adjust salt if necessary, and serve immediately.
Trivia
This type of frying is also very common in other countries with variations on the ingredients, for example in Japan you would find tempura, a very light fry; in Italy, on the other hand, the classic is the use of a well-defined breading to give crispiness. Remember that the quality of the oil and the frying temperature are essential to obtain a light and tasty result.
