Mojito Mousse

The mojito mousse is a dessert inspired by the classic Cuban cocktail, but prepared in a sweet and alcohol-free version so that it can be enjoyed by everyone. Here is the recipe with an Italian touch:

Ingredients

  • 250 ml fresh whipping cream
  • 3 egg yolks
  • 80 g granulated sugar
  • 8 g gelatin sheets (fish glue)
  • The juice and zest of 1 lime
  • A handful of fresh mint leaves
  • A small amount of dark chocolate (for decoration, optional)
  • Water as needed for the gelatin

Preparation

  1. Start by hydrating the gelatin sheets in cold water for about 10 minutes.
  2. Meanwhile, in a large bowl, beat the egg yolks with the sugar until you obtain a foamy and light mixture.
  3. Heat the lime juice in a small saucepan and, once warm, squeeze the hydrated gelatin well and dissolve it in the lime juice off the heat.
  4. Pour the lime and gelatin mixture into the beaten yolks, stirring gently until everything is uniform.
  5. Finely chop the fresh mint leaves and add them to the cream.
  6. In another bowl, whip the fresh cream until foamy but not too stiff.
  7. Gently fold the whipped cream into the yolk, sugar, lime, and mint cream, trying to keep the mixture as airy as possible.
  8. Pour the mousse into glasses or cups and let it rest in the refrigerator for at least 3 hours.
  9. Before serving, decorate with dark chocolate shavings and a mint leaf for an elegant finish.

The mojito, from which this dessert takes inspiration, is a cocktail based on rum, sugar, lime, mint, and sparkling water. Traditionally it is an aperitif much appreciated for its freshness and balanced taste. The mousse version maintains the aromatic characteristics of the mojito, transforming them into a light and fragrant dessert.

If you desire an extra touch of flavor, you could add a tablespoon of white rum to the mixture, if there are no issues with consuming alcohol. Alternatively, to emulate the flavor use a non-alcoholic rum extract.
