Molten Chocolate Cake

The molten chocolate cake is a classic loved by many with a sweet tooth. The magic of this dessert lies in its soft, warm center that flows out as soon as you cut it. Here’s how to prepare it.

Ingredients

  • 200 g dark chocolate
  • 100 g butter
  • 100 g sugar
  • 2 whole eggs
  • 2 egg yolks
  • 50 g flour

Preparation

  1. Preheat the oven to 200 °C.
  2. Melt the chocolate in a double boiler or in the microwave together with the butter.
  3. In a bowl, beat the eggs, egg yolks, and sugar until you obtain a light and frothy mixture.
  4. Gently incorporate the melted chocolate into the egg and sugar mixture.
  5. Add the sifted flour and mix until you obtain a homogeneous batter.
  6. Butter and flour some baking molds or use silicone molds.
  7. Fill them about 2/3 with the batter.
  8. Bake the cakes for about 8-10 minutes. The time may vary depending on the oven and the thickness of the mold, so keep an eye on them.
  9. Remove the cakes from the oven and serve them immediately to enjoy the molten center.

Tips

The key to the success of the molten cake lies in the timing of the baking. If you overbake it, the center will solidify and you’ll lose the desired effect; on the contrary, if you don’t bake it enough, you risk the cake not holding its shape. It is ideal to serve it with a scoop of vanilla ice cream or a dusting of powdered sugar for a contrast of temperatures and textures.
