No-Bake Yogurt and Lemon Cake

The no-bake yogurt and lemon cake is a delicious option for a fresh and light dessert, especially during the warmer months. Here is the recipe:

Ingredients

  • 250 g dry biscuits (such as Digestive or Oro Saiwa)
  • 100 g melted butter
  • 500 g Greek yogurt or full-fat plain yogurt
  • The grated zest of 2 lemons
  • The juice of 2 lemons
  • 100 g powdered sugar (more or less according to taste)
  • 12 g gelatin sheets (fish glue) or 2 teaspoons powdered gelatin
  • Fresh fruit or lemon syrup for decoration (optional)

Preparation

  1. Start by crushing the biscuits in a food processor or placing them in a bag and crushing them with a rolling pin, until you obtain a sandy consistency.
  2. Mix the crushed biscuits with the melted butter until the mixture is homogeneous.
  3. Spread this biscuit mixture on the bottom of a springform pan, previously lined with parchment paper, pressing well with the back of a spoon to create the base of your cake. Place in the fridge to set for at least 30 minutes.
  4. Meanwhile, soften the gelatin sheets in cold water for about 10 minutes or follow the instructions for powdered gelatin.
  5. Heat the lemon juice without bringing it to a boil and dissolve the squeezed gelatin (or the already prepared gelatin following the manufacturer’s instructions) in the hot juice.
  6. In a bowl, mix the yogurt with the powdered sugar and the grated lemon zest until you obtain a homogeneous mixture.
  7. Add the lemon juice with the gelatin to the yogurt and mix thoroughly.
  8. Pour the yogurt and lemon mixture onto the set biscuit base, leveling well with a spatula.
  9. Let the cake rest in the refrigerator for at least 4 hours, or even better, overnight.
  10. Before serving, decorate with fresh fruit or a bit of lemon syrup for an extra touch of elegance.
