Oven-Baked Frittata

The oven-baked frittata is a variant of the more classic pan-cooked dish that has the advantage of being lighter and is perfect when you need to prepare portions for many people. Here’s how to make it.

Ingredients

  • 6 large eggs
  • 100 ml of milk
  • Salt and pepper to taste
  • 50 g of grated cheese (pecorino or parmesan)
  • Aromatic herbs to taste (e.g. parsley, basil, chives)
  • 1 small onion (optional)
  • Extra virgin olive oil to taste
  • Extra ingredients of your choice, such as vegetables (zucchini, peppers, spinach), cured meats (cooked ham, speck) or cheeses (mozzarella, goat cheese)

Preparation

  1. Preheat the oven to 180 °C.
  2. In a large bowl, beat the eggs with a pinch of salt and pepper until you have a homogeneous mixture.
  3. Add the milk and grated cheese to the mixture and mix well.
  4. If you wish to add onion, slice it thinly and lightly sauté it in a pan with a drizzle of oil until it becomes transparent.
  5. Incorporate the chopped aromatic herbs and any other extra ingredients you have chosen into the egg mixture, including the onion if you have decided to use it.
  6. Pour a drizzle of oil into a baking dish and spread it over the entire surface to prevent the frittata from sticking.
  7. Pour the mixture into the baking dish and bake for about 25-30 minutes or until the frittata is golden on the surface and well cooked in the center.
  8. Let it cool slightly for a few minutes before cutting the frittata into portions and serving it.

The oven-baked frittata can be prepared in advance and consumed both hot and cold. It is perfect for picnics, buffets or as an office lunch. Furthermore, it is a great way to use up leftover vegetables or cured meats that you have in the fridge.
