Oven-Baked Marinated Salmon
17/11/2023Here is the recipe to prepare a delicious marinated salmon baked in the oven, with an Italian touch in the seasoning.
Ingredients
- 4 salmon fillets (150-200g each)
- Juice of 1 lemon
- 2 tablespoons extra virgin olive oil
- 1 garlic clove, crushed
- 1 sprig of fresh rosemary
- Salt and pepper to taste
- 1 tablespoon finely chopped aromatic herbs (such as dill or parsley)
- Grated zest of 1 lemon (for an intensified citrus flavor)
- White wine, about 1/2 cup (for an even more Italianized variation)
Preparation
- Preheat the oven to 180 °C.
- In a bowl, prepare the marinade by combining the lemon juice, extra virgin olive oil, crushed garlic, chopped rosemary (or left whole if you prefer a less intense aroma), salt, pepper, the chopped aromatic herbs and the grated lemon zest. If desired, you can also add a splash of white wine to give the dish an extra boost.
- Arrange the salmon fillets in a baking dish and pour the marinade over them, making sure the fish is well coated.
- Let the salmon marinate in the refrigerator for at least 30 minutes.
- Line the baking tray with parchment paper and place the salmon fillets on top, removing excess marinade.
- Bake for 12-15 minutes, or until the salmon is cooked but still moist inside.
- Remove from the oven and let the salmon rest for a couple of minutes before serving.

Salmon is a very versatile and healthy fish, rich in Omega-3. Marinating not only flavors the fish but can also help “cook” it slightly, especially if using lemon juice or vinegar in the marinade. Serve this dish with a side of seasonal vegetables or a fresh salad for a balanced and delicious meal.
