Oven-Baked Marinated Salmon

Here is the recipe to prepare a delicious marinated salmon baked in the oven, with an Italian touch in the seasoning.

Ingredients

  • 4 salmon fillets (150-200g each)
  • Juice of 1 lemon
  • 2 tablespoons extra virgin olive oil
  • 1 garlic clove, crushed
  • 1 sprig of fresh rosemary
  • Salt and pepper to taste
  • 1 tablespoon finely chopped aromatic herbs (such as dill or parsley)
  • Grated zest of 1 lemon (for an intensified citrus flavor)
  • White wine, about 1/2 cup (for an even more Italianized variation)

Preparation

  1. Preheat the oven to 180 °C.
  2. In a bowl, prepare the marinade by combining the lemon juice, extra virgin olive oil, crushed garlic, chopped rosemary (or left whole if you prefer a less intense aroma), salt, pepper, the chopped aromatic herbs and the grated lemon zest. If desired, you can also add a splash of white wine to give the dish an extra boost.
  3. Arrange the salmon fillets in a baking dish and pour the marinade over them, making sure the fish is well coated.
  4. Let the salmon marinate in the refrigerator for at least 30 minutes.
  5. Line the baking tray with parchment paper and place the salmon fillets on top, removing excess marinade.
  6. Bake for 12-15 minutes, or until the salmon is cooked but still moist inside.
  7. Remove from the oven and let the salmon rest for a couple of minutes before serving.
