Pan-Fried Potatoes and Peppers

Pan-fried potatoes and peppers is a typical dish in Italian cuisine: simple, colorful, and tasty. Here is the recipe.

Ingredients

  • 500 g potatoes
  • 2 bell peppers (preferably of different colors, for example one red and one yellow)
  • 2 garlic cloves
  • Extra virgin olive oil
  • Salt
  • Black pepper
  • A bunch of fresh parsley (optional)

Preparation

  1. Start by washing the potatoes and, if you prefer, peel them. Then cut them into cubes about 2 cm on each side.

  2. Wash the peppers, remove the seeds and the white inner parts and cut them into strips or cubes, according to your preference.

  3. In a large pan, heat a generous drizzle of extra virgin olive oil and add the peeled and crushed garlic cloves.

  4. When the garlic starts to sizzle, add the potatoes and let them brown for a few minutes over high heat, stirring occasionally.

  5. Lower the heat, cover the pan and let the potatoes cook until they are almost tender, which may take about 15-20 minutes depending on the size of the cubes.

  6. Add the peppers, season with salt and pepper and continue cooking (always covered) for another 10-15 minutes, stirring occasionally. Cooking times may vary depending on the desired crunchiness for the peppers.

  7. If desired, towards the end of cooking, you can uncover the pan to evaporate the water released by the peppers and make the potatoes and peppers more golden and a bit crispy.

  8. If you like, just before turning off the heat, add some chopped fresh parsley.

Let it rest for a couple of minutes before serving this colorful and tasty dish, which will perfectly accompany both meat and fish.

Trivia
