Pancake Tower

The pancake tower is a delicious dish that lends itself to both a hearty breakfast and a brunch. Here’s how to prepare it, with an Italian touch that never hurts.

Ingredients

  • 2 eggs
  • 1 glass of milk
  • 1 glass of flour
  • 2 tablespoons of sugar
  • 1 pinch of salt
  • 1/2 sachet of baking powder
  • Butter for the pan
  • Fresh fruit to taste (for example strawberries, blueberries or bananas)
  • Maple syrup or honey

Preparation

  1. In a bowl, beat the eggs with the sugar until you obtain a frothy mixture.
  2. Add the milk, then the sifted flour, the pinch of salt and the baking powder, and mix until you obtain a homogeneous batter.
  3. Heat a non-stick pan and add a little butter.
  4. Pour a ladle of batter into the pan and cook the pancake until bubbles start to form on the surface, then flip it and cook for another minute on the other side.
  5. Repeat until the batter is finished, stacking the pancakes one on top of the other to form the tower.
  6. Garnish the pancake tower with the sliced fresh fruit and a drizzle of maple syrup or honey.

To give it an even more Italian touch, you can spread a thin layer of Nutella or jam between one layer and the other.

Trivia

Pancakes are a typical preparation from North America, but in Italy we have a similar version called “frittelle” or “crespelle”. The American variant involves the use of baking powder to make the pancakes thicker and fluffier. The pancake tower, stacked high and served with maple syrup, has become iconic for “American-style” breakfasts.
